Soups & Stews

Dirty South Stew

  • 4 lbs of stew meat
  • 1 stick of butter
  • 4 Tbsp of flour
  • 2 white onion
  • 1 bag of carrots
  • 4 lbs of potatoez
  • 2 boxes of Swanson Chicken Broth
  • 2 pax of Stew Seasoning (Lawrys)
Prep/Cook Time 2.5 Hours

Phase 1: Bust out a skillet and brown the stew meat, dont cook it all the way thru, just get the edges of all the meat a little cooked looking, while your doing this put some fresh ground pepper in the mix. After its nice n Brown lets move on to the next phase.

Phase 2: Put the brownD meat in a BIG pot, toss in both boxes of Chicken broth. Both pax of stew mix. Fill about another 3 inches with water, just so the meat is kinda floating there in the water/borth mix. Now you need to BOIL this for an hour. Let this ride for 1 hour str8. Now While your waiting for this sexy devil to boil start cutting your onion, taderz and carrots into LARGE chunks and set them aside. Please peel the carrots and most of the potatoes (leave a little skin on each tader), no one wants to eat dirty root skin. After n hour lets move on to the next phase.

Phase 3: Now its time to throw all your veggies into the stew, top it off with water, so everything is under water and let everything boil for another hour. Add some fresh ground pepper and a little salt (to taste). Walk away and come back in 1 hour and get ready for the 4th and final Phase!!!!!

Phase 4: Its ROO time. Now you want to make something to thicken up this juice. Your going to melt a stick of butter at Med heat. Once its completely melted you want to add one TBSP of flour. mix it in well, no lumps. After its 100% dissolved, add another, Rinse Repeat untill about 4 TBSPS of flour have been added to the butter. Dont BURN IT NEWB, or you have to start over and everyone is going to laff at you. Once the Roo is complete, Pour it all into the Hot bubbling stew. Mix well. Now Boil for another 15 min then remove your stew from the HOT burner and put it on a cold one. Let it sit with NO LID for a little bit so you dont burn the inside of your mouth.

Southern Tader Soup

  • 5 lbs bag of taders
  • 1 LARGE white onion
  • 2 box of Swanson chicken broth
  • 1/4 cup milk
  • 1 Half n Half
  • bacon pack
  • bundle of green onion
  • salt/pepper
  • 1/4 stick of butter
  • block of chedder cheese
Cook Time: 1.5 hours

Phase One

  1. Peel taders 100%. Cut them into blox, similar to the small blox of cheese you would put on a tasty buttery cracker.
  2. Cut onion into nice sized pieces.
  3. Cook all your bacon, make it kinda crispy. Once its complete smash it to little chunks then set it aside.
  4. Now pour your chicken broth into a large pot, throw in the potatoes, salt pepper, bacon n onion.
  5. Add some water to the pot, just make sure you fill it up to the point the water is half an inch from the taders.
  6. Let this boil, on high, until all the potatoes are close to being ready to consume and all the onions are damn near transparent.
  7. Remove from burner.
Phase Two
  1. Throw in your quarter stick of butter.
  2. Add more water to almost fill up the whole.
  3. Add milk, and SLOOWWWWLLLY pour in half n half until the juice of the soup is snowy white.
  4. Put it back on the burner for another 20 min of cooking.
  5. While your cooking, take the green onions and cut small chunks off the ends and set them aside.
  6. Grate your cheeze nice n ez like.
  7. When the 20 min expires, put some soup in a bowl, cover the top in fresh grated cheeze and sprinkle a few green onion on top, let it sit for a sec, so the cheez kinda melts.
  8. Enjoy.
