Legendary Texas Fillets

  • 5lbs Of Stew meat chunks (about 50 to 60 nice sized beef chunks)
  • 2 Bottles of ALLEGRO CAJUN (hot n spicy) Beef marinade
  • 2 Red Bell Pepper
  • 2 Green Bell Pepper
  • 2 Orange Bell Pepper
  • 3 Onions (yellow)
  • 1 Large bottle of Jallapenos pre sliced
  • 50 or 60 slices of MAPLE bacon (if u cant get ahold of maple bacon, you can use regular)
  • 1 box of SHARP toothpix
  • 1 Bag of charcoals (matchlight playa`)
  • 1 Bag of mesquite wood chips for grilling
Prep
As soon as you get home, wash off that meat and put it in a large container with the Allegro marinade, you will need to marinade this beef for 2.5 Hours *You CANNOT leave it in longer, it will destroy your meat*

While you wait
Prepare your veggies.
Cut all peppers and onions about .6 inches thick in strips put em in a big bowl or whateva n wait for meat to complete the marinade process.

When meat is ready, take one piece, put a jallapeno in the middle, place an onion on top of it, then any color of bell pepper on top of that, It needs to be in this order for the flava` to cook into the meat. Take a strip of bacon, wrap it around the meat a few time and toss a toothpick in to keep the bacon locked on the meat n veggies (think mini skewer). Your end product will be a piece of bacon wrapped firmly around a peice of meat with veggies sticking out on 2 ends. Make sure you wrap that bacon TIGHT around the meat.

Make about 60 of theese little hoes. Get a homie to help you because this process takes A LONG TIME. Now when they are ALL complete, take a pepper grinder and get some fresh ground pepper on the tops. Get those coals and wood chips started after your pepper the wraps.

Place the wraps in the fridge while you wait for the coals do die down to no flame action (trust me on this part). The grease from the bacon is going to cause allot of fire in the grill and you want to keep this at a minimum. Make sure you dont forget to fridge em because the bacon will heat up at room temp and become soggy and the veggies will fall out of your wrap. Now when the coals are Gray and the wood is RED HOT. Start placing them on the grill. Rotate them every 5 min for a good 20 to 30 min. This is a hard process because you sometimes have to keep moving the little peices to keep them from stickin to the grill. Keep the lid closed for 4 min at a time to get that misKEET wood flavor cooked into that meat.

Tal's Nuts

  • whole pecans
  • lots of sugar
  • vanilla extract/flavoring
  • brown sugar
  • cinnamon (to taste, opitonal)
  1. Get large bowl of HOT water, (boil it if you want to) and start whisking in the regular sugar to make a simple syrup (I used mabe 3-4 + cups).
  2. Take your pecans and put them in the simple syrup to sit for a bit. Nows the time to add a small amount of the vanilla to that as well.
  3. After your happy with the amount they have soaked, get a large bowl and put the brown sugar and cinnamon in it. Drain your pecans and toss them in the sugar. (if you want you now have pecan, vanilla simple syrup you can use in coffee)
  4. Grab a sheet pan and cook at 325° for maybe 10 min, there's no real set time other than when I know they are done.
  5. NOM NOM NOM!
